hi Vicky! u can finely chopped it and add to pulao, pasta or pizza. u can give Vignesh dish of his choice and ingredients of your choice. grate Ghia, boil it and add to raita, or grind veggies and add to Dalia, u could make palak parantha, or paneer carrot boiled potatoes parantha. take finely chopped veggies, parboil it and then sautey in ghee and make it as filling of parantha, dosa ,cheela, uttapam. knead finely ground veggies in dough. Vicky u need to look for innovative ways to add veggies to his plate. hope this will be of help to u!
