Moving to a healthier diet

Hello fellow parents, I am thinking of introducing more healthy food to my family's diet. We do not get our 5-a-day and would like to get some more vegetables in our diet. In this regard, I would like some ideas on some salad recipes, which are easy to make and have a light dressing.   Please share your recipes and ideas. TIA!

Anurima, boil and mash bottlegourd and knead into atta; add boiled, grated beetroot to raita or for that matter any other veggies to raita.. these are some ways in which I manage to sneak in more veggies in my family's diet.

Anurima, one trick that works for me is that I always have cut vegetables such as cucumber, bell peppers, tomato, onion, lettuce, even grated cabbage, coriander, boild aloo leave ready in my fridge. Whenever I am thinking of a snack for myself or family, the readiness of these just makes it easy for me to put together something.. mix vegetable patty, or just a salad with olive oil and lemon dressing, add veggies to daal or khichdi. Or add to sprouts or boiled/cooled rajma and make a quick salad. the next time you make rajma or white chole, boil and keep some aside to toss into a quick salad.

Thank you Carol for sharing the recipe of the dip. I will try that soon. Rachna, yes, disguising vegs in food is a great way. Aanchal, I have started cutting and keeping vegs in my fridge too. Thank you all :)
