Hi Shweta Malhotra! U have many options in a vegetarian protein rich diet . For ex -besan cheela with paneer filling, dosa with boiled and sauteed vegetable filling, upma with lots of finely chopped veggies, poha with roasted ground nuts and finely chopped veggies, sprouted dal salad, sandwiches with tofu and boiled potatoes as filling, parantahs with veggies filling . Also u can make curries such as paneer matar curry, egg curry, malai kofta, shahi paneer ,rajma and safed chana and other legumes which are rich in protein. U can make custards with fruits ,smoothies , milk shakes with lots of dry fruits such as Badam and pistas and kajus etc. Do give at least two servings of fruits in a day like cheeku,grapes , and summer fruits like water melon or musk melon etc. Make the most of summer fruits and vegetables and try and make her taste everything with love and not force. Have a plate for yourself and praise along "wow it's yummy" "how could it be so delicious ". Enjoy your food and your child should get enticed and can't resist having it. Make stories how cartoon characters have it and become stronger. Hope this helps!
