 Learn how to make Sweet Corn Soup

What would be a more perfect recipe this winter than having a yummilicious, easy to make sweet corn soup. It’s nutritious as it comes with a colourful assortment of vegetables, plus it’s a perfect comfort sumptuous appetizer recipe. Besides, it’s ready in just 15-20 minutes with readily available ingredients. So without much ado let’s get started.

For making this recipe you would need:

Chopped carrot -    1 large finely chopped

Chopped beans-     10-12 finely chopped

Spring onion-         1 tablespoon finely chopped

Sweet corn kernels-      1 cup

Sweet corn paste -    1 cup

Green chilli -        ½ a  green chilli (optional)  

Corn flour mixture-        3-4 spoons

Salt-            as per taste

Sugar-            as per taste

Pepper powder-     (black or white) ½ a teaspoon 

Butter-            1 tablespoon

Water-            2½ cups

Oregano-        ½ a teaspoon

Cream or Malai-    1 tablespoon (optional)

Coriander-        1 tablespoon 

 

Steps to make sweet corn soup:

  1. Heat up a pan, add butter to it. 

  2. Add boiled corn kernels to butter and saute for a minute them until they are soft and tender.

  3. Add finely chopped carrots and beans to it and saute for a minute.

  4. Pour 2 and a half cups of water to the pan, add corn paste to this and let it boil for 5-7 minutes.

  5. Now add the salt, sugar, pepper powder, green chilli and oregano. Again let it simmer for 4-5 minutes.

  6.  Make a paste of corn starch and ½ cup water and gradually keep adding it while stirring continuously. You can put 3-4 spoons depending on the consistency of soup you would like to have.  Add cream or malai and finely chopped spring onion to it. Let it simmer for a minute and then you could turn off the flame.

  7. Garnish with coriander and you are ready with your magical soup.
