Creamy Vegetable Sandwich
A veggie rich, healthy Mayo-textured creamy Sandwich that gets ready in minutes.
Ingredients:
Bread slices toasted in butter
For the filling
Carrots, finely shredded
Cabbage, thinly sliced
Onions, finely chopped
Salt
Pepper
2 tsp Wholewheat atta
½ cup Milk
Cheese, finely shredded
Method:
1. In a pan smear butter and saute onions, cabbage and carrots till cooked.
2. Now add in atta and mix well with milk in low flame. Mix well so that no lumps are formed.
3. Adjust salt and pepper.
4. Garnish with cheese and stir well till it achieves a creamy texture.
5. Spread it across bread slices and serve.
Corn Cheese Cutlets
Skip the maida and instead try these healthy, yummy cutlets using Maize flour. It also adds an interesting texture to the cutlets.
Ingredients
2 boiled and mashed Potatoes
Corn kernels, boiled
Salt, Pepper
Red chilli powder
Jeera powder as per taste
Cheese, grated
Maize flour to bind
Method
1. Mix all the ingredients and shape in the form of Cutlets. Shallow fry in butter/ghee.
Bread Paneer Rolls
This is really a quick snack and can be made in a jiffy.
Ingredients
Bread slices
Oil to fry
For the filling
Panner cubes, small
Onions
Coriander
Lemon juice
Salt
Chilli powder
Turmeric powder
Amchur powder
Chat masala
Raisins
Method:
1. Mix the filling and keep it ready.
2. Dip the bread slices after cutting out the corners in water just for a second and squeeze the water from it. Now keep some filling in center and make it into small balls.
3. Deep fry in medium hot oil and serve with sauce or chutney.
Pumpkin and Carrot Puris
An unusual twist to the regular puris, these are healthy and tasty. Also, a great way to introduce some more veggies in your child’s diet.
Ingredients
Pumpkin and Carrot, boiled and mashed well.
Atta
Salt
Red chilli powder
Turmeric powder
Water, if needed
Method
1. Mix the atta with all the ingredients and make a firm puri dough. Since the pumpkin and carrots will have water content, add extra water to knead dough very slowly.
2. Make small Puris and deep dry. Serve with coriander or mint chutney.
Besan Toast
A quick snack, these toasts also make for a wholesome breakfast

Besan powder
Redu chilly powder
Turmeric
Coriander Leaves
Garam Masala
Salt
Ajwain
Asafoetida
Grated Cheese
Bread Slices
Method
1. Mix all the ingredients to a semi liquid consistency.
2. Cut bread into rectangle shape .Dip each piece in besan paste and toast in butter.
3. Top it off with cheese.
