Delicious potato recipes for your growing child

Why is it that when you are stuck at “what should we cook today?” the answer is always “Chalo! Let’s make some aloo!” Potatoes are incredible– easily available, easy to store, wholesome, cheap, delicious and oh-so-versatile.
It is also misleading to think that eating potatoes always makes us gain weight. Well, you needn’t worry anymore – potatoes are a surprisingly rich source of vitamin C and provide useful amounts of starch, thiamine and niacin, and around a hundred grams will provide about eighty calories.
Potato being such an interesting vegetable I would like to share with you all some of my favourite potato recipes for your whole family to enjoy.
Wholesome And Easy Sweet Potato Bread Recipe
Ingredients For Sweet Potato Bread Recipe
- Sweet potatoes boiled, peeled and mashed 300 grams
- Whole wheat flour (atta) 2 cups
- Refined flour (maida) 1 cup + for dusting
- Fresh yeast 1 tablespoon
- Castor sugar (caster sugar) 1 teaspoon
- Salt 1½ teaspoons
- Fresh rosemary finely chopped 2 tablespoons
- Extra-virgin olive oil 2 tablespoons
Method For Preparing Sweet Potato Bread
- Mix together yeast and castor sugar in 1cup lukewarm water in a bowl
- Set aside to activate
- Mix together wheat flour, refined flour, salt and rosemary in another bowl
- Add activated yeast, olive oil and sweet potatoes and mix till well combined into a dough
- Dust the worktop with some flour and transfer the dough on it
- Knead for 10 minutes or till it turns soft and elastic
- Place the dough in an oiled bowl, cover with a cling film and set aside in a warm place for 30 minutes
- Line a loaf tin with butter paper
- Knock back the dough
- Place the dough in the lined tin and set aside in a warm place for 20 minutes
- Preheat oven to 180° C
- Dust the dough with some flour, place the tin in the preheated oven and bake for 25-30 minutes
- Remove from oven, cool and de-mould
- Slice and serve
Quick And Simple Recipe Of Over Loaded Potato Skins
Ingredients For Over Loaded Potato Skins
- Potatoes boiled-4 medium
- Oil 1 tablespoon
- Bacon strips, chopped 10-12
- Crushed black peppercorns to taste
- Salt a pinch
- Fresh thyme ½ teaspoon
- Spring onion greens finely chopped ¼ cup + for garnishing
- Processed cheese grated as required
Method For Preparing Over Loaded Potato Skins
- Halve the boiled potatoes horizontally, scoop out the flesh and reserve it along with the shells
- Preheat oven to 180º C
- Heat oil in a non-stick pan. Add bacon and sauté for 2-3 minutes
- Add potato flesh, mash lightly and cook for 1-2 minutes
- Add crushed peppercorns and salt and mix
- Add thyme and spring onion greens and mix well
- Fill the potato shells with bacon mixture and place them on the baking tray
- Put some cheese on top of stuffed shells
- Place the baking tray in the preheated oven and bake till cheese melts
- Serve hot garnished with spring onion greens
Delicious And Easy Aloo Bajra Puri Recipe
Ingredients For Aloo Bajra Puri Recipe
- Potatoes boiled, peeled and mashed-2 medium
- Millet flour (bajre ka atta) pearl 1 cup
- Salt to taste
- Roasted peanuts powder 2 tablespoons
- Fresh coriander leaves chopped 1 tablespoon
- Ginger-green chilli paste 2 teaspoons
- Oil to deep fry
Method For Preparing Aloo Bajra Puri
- Mix together potatoes, salt, peanut powder, coriander leaves and ginger-green chilli paste in a bowl
- Heat sufficient oil in a kadai
- Add millet flour to the potato mixture and knead well into semi soft dough
- Divide the dough into 8 equal portions, shape into balls and roll out into thick puris
- Slide the puris, one at a time, into hot oil and deep-fry till puffed
- Drain on absorbent paper
- Serve hot
Quick And Easy Potato Breakfast Casserole Recipe
Ingredients For Potato Breakfast Casserole
- Potatoes boiled, peeled and mashed- 3-4 medium
- Tomatoes cut into roundels 2-3 medium
- Butter for brushing and for greasing
- Bacon strips 10-12
- White bread slices 8
- Eggs 4
- Salt to taste
- Crushed black peppercorns to taste
- Mixed herbs to sprinkle
- Fresh coriander leaves chopped for garnishing
Method For Preparing Potato Breakfast Casserole
- Preheat an oven at 180º C
- Preheat an electric griller and grease it with some butter
- Fill a piping bag fitted with star nozzle with mashed potatoes
- Grill the tomato roundels on preheated griller from both sides till grill marks appear
- Transfer on a plate
- Similarly, grill bacons trips and bread slices brushing with some butter and transfer on 2 different plates
- Line an oval glass baking dish with grilled tomatoes
- Pipe out mashed potato and place grilled bacon strips on top
- Break eggs on top
- Sprinkle some salt, crushed peppercorns and mixed dried herbs on top
- Put the baking dish on a baking tray
- Place the baking tray on preheated oven and bake for 8-10 minutes
- Garnish with coriander leaves and serve with grilled bread slices
Traditional Baked Baby Potato Nachos Recipes
Ingredients For Baked Baby Potato Nachos
- Baby potatoes-16-20
- Tortilla chips to serve
- Sea salt as required
- Pickled jalapenos 3-4
- Refried beans ¾ cup
- Spice mix to sprinkle
- Spring onion greens chopped 2-3 stalks
- Cheddar cheese 100 grams
- Salsa of roasted tomato for topping
- Sour cream for drizzling
- Black olives pitted and sliced 3-4
- Green olives pitted and sliced 3-4
Method For Preparing Baked Baby Potato Nachos
- Spread sea salt on a baking tray and place the potatoes on it
- Bake in an oven at 200ºC for 12-15 minutes
- Remove from heat and let the potatoes cool
- Cut jalapenos into small pieces
- Heat the refried beans in a non-stick pan till just warm
- Scoop the baked potatoes to get a cavity in the centre
- Place them on a baking tray and sprinkle spice mix on top
- Spoon a portion of the warm refried beans, reserving some for plating, into each potato
- Top each with a piece of jalapeno, some spring onion greens and grated cheese
- Put the tray in the oven and bake at 200ºC for 5 minutes or till the cheese melts
- Spread the reserved refried beans on a serving plate and place the potatoes on it
- Top each potato with the tomato salsa and drizzle sour cream on them
- Finish by topping with black and green olive slices and serve immediately with tortilla chips
