Recipe: Kodo Millet Idli (12 months - 18 months)

Kodo Millet Idli is the perfect food to give to your little one if you are looking for something highly nutritional and non-glutinous. The fibre content makes them easier to digest whereas the iron levels help to support immunity and brain development. The best part about this recipe is that you can experiment with different seasonings, such as cumin seeds or coriander leaves, to add flavor to the idlis so your little one is never bored of eating them. The consistency can also be changed by adjusting the amount of water while grinding. You can add curd to help with fermentation.
Preparation Time: 10 minutes
Total Cooking Time: 20-25 minutes (including steaming)
Ingredients

3 heaped cups of kodo millet

1 cup white gram (urad dal)

Salt to taste

Oil for greasing containers
Number of Servings: 12-15 idlis

Method:
Step 1: Clean kodo millet and dal separately and soak in water for 3-4 hrs. Grind urad dal to a fluffy batter. Grind the millet to a fine paste.
Step 2: Mix the two ground pastes together. Add salt and mix well. Leave to ferment overnight.
Step 3: Next morning grease containers and half fill each container with the batter.
Step 4: Steam till cooked.
