Healthy stuffing for snack toast for your childs tiffin

We all love stuffed sandwiches or stuffed rolls or wraps. Why not! It not only gives us good flavor and different variety to eat, but also a quick and healthy option and not to forget they are easy to carry. Today we are sharing with you all few stuffings which are delicious, power packed and a complete pack for your child’s everyday nutritients. Also helpful for fussy eaters.

Spinach Corn Cheese Toast

Ingredients For Spinach Corn Cheese Toast

  1. Spinach leaves (palak) blanched 30-35
  2. American corn kernels 1 cup
  3. Cheese grated 1 cup
  4. Brown bread slices 16
  5. Onion 2 medium
  6. Garlic 4 cloves
  7. Olive oil 2 tablespoon
  8. Green chilli 2
  9. Salt to taste
  10. Black pepper powder 1 teaspoon

Method To Prepare Spinach Corn Cheese Toast

  1. Boil corn in a microwave oven
  2. Chop onion and garlic
  3. Heat 1 tbsp olive oil in a non-stick pan add onion and garlic and sauté
  4. Chop the blanched spinach leaves and add
  5. Chop green chilli, add and mix
  6. Remove corn from microwave oven, drain and add along with salt, pepper powder and mix well
  7. Transfer the mixture into a bowl, add cheese and mix
  8. Spread the mixture evenly on 4 bread slices, cover with remaining slices
  9. Drizzle some olive oil over each sandwich
  10. Heat a sandwich griller, drizzle some olive oil over it and grill the sandwiches till both sides are evenly golden
  11. Cut each sandwich into 3 strips
  12. Serve hot

Capsicum & Corn Stuffing

Method To Prepare Capsicum And Corn Stuffing

  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 30 seconds or till they turn translucent
  2. Add the capsicum and green chillies and sauté on a medium flame for 1 minute
  3. Add the sweet corn, cornflour-milk mixture and salt, mix well and cook on a medium flame for 1 minute or till the mixture thickens, while stirring continuously
  4. Divide the filling into 16 equal portions and keep aside
  5. Now make the above stuffing as a sandwich or a wrap

Mixed Sprouts Open Toast

Ingredients For Mixed Sprouts Open Toast

For The Mixed Sprouts Topping

  1. 2 cup boiled mixed sprouts (moong , matki , chana etc.)
  2. 2 tsp chilli powder
  3. 2 1/2 tsp chaat masala
  4. 2 1/2 tsp cumin seeds (jeera) powder
  5. 4sp lemon juice
  6. salt to taste

Other Ingredients For Mixed Sprouts Open Toast

  1. 16 whole wheat bread slices
  2. 4 tsp low-fat butter for brushing
  3. 4 iceberg lettuce leaves , torn into pieces
  4. 10 tbsp grated carrot

Method To Prepare Mixed Sprouts Topping

  1. Combine all the ingredients in a deep bowl and mash lightly using the back of a spoon
  2. Divide the mixture into 16 equal portions and keep aside

Method To Prepare Mixed Sprouts Open Toast

  1. Cut each whole wheat bread slice into a round of 50 mm. (2”) using a cookie cutter
  2. Apply 1/2 tsp of butter on each bread roundel
  3. Arrange them on a baking tray with the buttered side facing upwards
  4. Bake in a pre-heated oven at 180°c (360°f) for 8 to 10 minutes or till crisp
  5. Place a toasted bread roundel on a clean, flat surface
  6. Put a small piece of lettuce, a portion of the stuffing and 2 tbsp of carrots evenly over it
  7. Repeat step 3 to make 7 more open toasts
  8. Serve immediately

Oats Moong Toast

Ingredients For Oats Moong Toast

For The Topping To Prepare Oats Moong Toast

  1. 1 cup green moong dal (split green gram) , soaked and drained
  2. 2 1/2 cups roughly chopped coriander (dhania)
  3. 1 cup quick cooking rolled oats
  4. 2 tbsp finely chopped green chillies
  5. 2 1/2 tsp lemon juice
  6. 1 tsp baking powder
  7. 4 pinches sugar
  8. salt to taste

Other Ingredients To Prepare Oats Moong Toast

  1. 16 whole wheat bread slices
  2. 2 1/2 tsp olive oil for brushing and cooking

Method To Prepare Oats Moong Toast

  1. Combine all ingredients with approx
  2. 1 cup of water in a mixer and blend to a smooth paste
  3. Transfer the paste into a bowl and divide it into 10 equal portions
  4. Keep aside
  5. Brush 1/8 tsp of oil on one side of each bread slice
  6. Place each bread slice on a flat surface, with the brushed side facing downwards
  7. Spread a portion of the topping evenly over it
  8. Place each open sandwich on a non-stick tava (griddle) with the prepared topping side facing downwards and cook, using ¼ tsp of oil, till the topping turns golden brown in colour
  9. Turn over and cook on the other side till it turns golden brown in colour
  10. Cut each toast into 4 equal triangles
  11. serve immediately
