Spinach Corn Cheese Toast
Ingredients For Spinach Corn Cheese Toast
- Spinach leaves (palak) blanched 30-35
- American corn kernels 1 cup
- Cheese grated 1 cup
- Brown bread slices 16
- Onion 2 medium
- Garlic 4 cloves
- Olive oil 2 tablespoon
- Green chilli 2
- Salt to taste
- Black pepper powder 1 teaspoon
Method To Prepare Spinach Corn Cheese Toast
- Boil corn in a microwave oven
- Chop onion and garlic
- Heat 1 tbsp olive oil in a non-stick pan add onion and garlic and sauté
- Chop the blanched spinach leaves and add
- Chop green chilli, add and mix
- Remove corn from microwave oven, drain and add along with salt, pepper powder and mix well
- Transfer the mixture into a bowl, add cheese and mix
- Spread the mixture evenly on 4 bread slices, cover with remaining slices
- Drizzle some olive oil over each sandwich
- Heat a sandwich griller, drizzle some olive oil over it and grill the sandwiches till both sides are evenly golden
- Cut each sandwich into 3 strips
- Serve hot

Capsicum & Corn Stuffing
Ingredients For Capsicum And Corn Stuffing
Method To Prepare Capsicum And Corn Stuffing
- Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 30 seconds or till they turn translucent
- Add the capsicum and green chillies and sauté on a medium flame for 1 minute
- Add the sweet corn, cornflour-milk mixture and salt, mix well and cook on a medium flame for 1 minute or till the mixture thickens, while stirring continuously
- Divide the filling into 16 equal portions and keep aside
- Now make the above stuffing as a sandwich or a wrap

Ingredients For Mixed Sprouts Open Toast
For The Mixed Sprouts Topping
- 2 cup boiled mixed sprouts (moong , matki , chana etc.)
- 2 tsp chilli powder
- 2 1/2 tsp chaat masala
- 2 1/2 tsp cumin seeds (jeera) powder
- 4sp lemon juice
- salt to taste
Other Ingredients For Mixed Sprouts Open Toast
- 16 whole wheat bread slices
- 4 tsp low-fat butter for brushing
- 4 iceberg lettuce leaves , torn into pieces
- 10 tbsp grated carrot
Method To Prepare Mixed Sprouts Topping
- Combine all the ingredients in a deep bowl and mash lightly using the back of a spoon
- Divide the mixture into 16 equal portions and keep aside
Method To Prepare Mixed Sprouts Open Toast
- Cut each whole wheat bread slice into a round of 50 mm. (2”) using a cookie cutter
- Apply 1/2 tsp of butter on each bread roundel
- Arrange them on a baking tray with the buttered side facing upwards
- Bake in a pre-heated oven at 180°c (360°f) for 8 to 10 minutes or till crisp
- Place a toasted bread roundel on a clean, flat surface
- Put a small piece of lettuce, a portion of the stuffing and 2 tbsp of carrots evenly over it
- Repeat step 3 to make 7 more open toasts
- Serve immediately
Oats Moong Toast
Ingredients For Oats Moong Toast
For The Topping To Prepare Oats Moong Toast
- 1 cup green moong dal (split green gram) , soaked and drained
- 2 1/2 cups roughly chopped coriander (dhania)
- 1 cup quick cooking rolled oats
- 2 tbsp finely chopped green chillies
- 2 1/2 tsp lemon juice
- 1 tsp baking powder
- 4 pinches sugar
- salt to taste
Other Ingredients To Prepare Oats Moong Toast
- 16 whole wheat bread slices
- 2 1/2 tsp olive oil for brushing and cooking
Method To Prepare Oats Moong Toast
- Combine all ingredients with approx
- 1 cup of water in a mixer and blend to a smooth paste
- Transfer the paste into a bowl and divide it into 10 equal portions
- Keep aside
- Brush 1/8 tsp of oil on one side of each bread slice
- Place each bread slice on a flat surface, with the brushed side facing downwards
- Spread a portion of the topping evenly over it
- Place each open sandwich on a non-stick tava (griddle) with the prepared topping side facing downwards and cook, using ¼ tsp of oil, till the topping turns golden brown in colour
- Turn over and cook on the other side till it turns golden brown in colour
- Cut each toast into 4 equal triangles
- serve immediately
