Healthy Lunch Box Recipes For Your Child

We all have fond memories of school lunch boxes packed by our mothers. Nostalgia often hits us when we recall our childhood days sharing lunch with our friends and eating together at school. Kids get bored if we give them same type of food to school, and maintaining variety and a balance of nutrition can become a little tricky. To help you out of this dilemma, here are a few delicious, and nutrition rich lunch box recipes.

If you and your kids do not hesitate in eating non-vegetarian, here’s a lip-smacking and healthy, easy to cook recipe for you.

  1. CREAM CHEESE CHICKEN SANDWICH:

    Ingredients: Chicken boneless cooked with salt - shredded -one cup, Cabbage, Carrot, Bell Pepper, Cucumber, Tomato, Coriander leaves finely chopped, 2tbsp Cream cheese, half cup butter, one tablespoon bread slices.

    Method: Mix chicken, vegetables and cream cheese together in a bowl. This is the sandwich filling. Smear butter on one side of bread slice and fill it with the mixture. Top it with another bread slice. Trim of the edges and cut it diagonally. Nutritious sandwich is ready!

  2. GREEN RICE

    Ingredients: Basmati Rice cooked, one cup Spinach chopped, one cup Green bell pepper chopped, half cup Ginger Garlic paste, one spoon Onion chopped, 2tbsp Scrambled egg, one egg, Cardamom, cloves, cinnamon 3 each, Coriander leaves chopped, quarter cup Ghee, one tablespoon.

    Method: Heat ghee in a pan. Splutter whole spices- cardamom, closed cinnamon. Then sauté ginger garlic paste till raw smell fades away. Then add onions and sauté till pink. To this add spinach and cook. Add salt to this add bell pepper and sauté. Add one cup cooked Basmati Rice and mix everything well. Finally add scrambled egg n coriander leaves. Green Rice is ready.

  3. TOMATO CHICKEN RICE

    Ingredients: Basmati Rice cooked, one cup Tomato purée, three fourth cup Chicken Boneless cut into small pieces, half cup Onion chopped. 2tbsp Ginger Garlic paste, 1tsp butter 1 tbsp.

    Method: Heat butter. Add ginger garlic paste n sauté. Add onion and sauté. Add salt and then add Chicken pieces. Cover n cook till chicken is half cooked. To this add tomato puree and mix well. Cover and cook again. Cook till water is all dried up. Then add cooked basmati Rice and mix everything well. Decorate with coriander leaves.
