Broccoli pasta can benefit a 20-month-old child by providing essential nutrients like vitamins C and K, folate, and fiber, supporting immune function, digestion, and overall growth. The dish's antioxidants and calcium can also promote healthy bones and cell protection. Additionally, it introduces varied flavors and textures, encouraging adventurous eating habits.

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Ingredients:

  • 90 g pasta (farfalle)

  • 100 g broccoli florets (about ½ head)

  • 15g walnuts  (toasted)

  • 5g freshly grated Parmesan cheese

For the sauce:

  • 2 tsp butter (about 10g)

  • 2 tsp extra light virgin olive oil

  • 2/3 tsp garlic (minced)

  • ½ tsp grated lemon zest/ 1 tsp heapful julienned and minced lemon zest

  • 1 tbsp lemon juice

  • Dash of salt and freshly ground black pepper

Servings: 2-3 

Serving Size: 1 small bowl

Method:

  • Boil salted water in a large pot and cook the broccoli florets for 3 minutes, then remove and set aside. In the same water, cook the farfalle pasta according to package instructions, then drain and mix with the broccoli.

  • In a small skillet, heat butter and olive oil until melted. Add garlic and lemon zest, cooking for 1 minute over medium-low heat. Remove from heat and stir in salt, pepper, and lemon juice.

  • Pour the sauce over the pasta and broccoli, tossing to combine. Season to taste and serve warm in two shallow bowls, topping with Parmesan cheese and pine nuts if desired.
