These 5 beat-the-heat summer recipesare not only great for your child, but for you too. The best part? They’re easy and hardly time consuming at all!

 

MANGO FROSTIE

Ingredients

1 cup mango (sliced and chopped into cubes, frozen for about 2hrs)

2 medium bananas (chopped and frozen for 30 minutes)

½ cup Greek yogurt/plain curd (home-made)

1/2 tsp grated lemon zest

1 tsphoney (optional)

1/2 Tsp vanilla essence

Salt, a pinch

1 tbsp freshly chopped mint leaves

1/2 tsp lemon juice

 

Method

Chop the bananas and mangoes and let freeze for 30 minutes and 2hours respectively.

All you need to do is blend  all the ingredients together in a large bowl.

It will take about 10-15 minutes in order to blend it into a creamy consistency.Once blended serve immediately.

 

WATERMELON LEMONADE

Ingredients

1 cup Watermelon(deseeded and chopped)

1 tbsp Lemon juice

Mint leaves, ahandful

1 tsp Honey

Rock salt, a pinch

Black pepper, a pinch

 

Method

Chop the watermelon into square-shaped pieces and remove all the seeds.

In a mixer or blender add the watermelon and the rest of the ingredients, except rock salt and pepper.Do not grind or blend too much; it should be slightly chunky.

It should take about 2-3 minutes maximum. Then, sprinkle the rock salt and pepper on top and serve immediately.

 

PANEER STUFFED LITCHI

Ingredients

10 Litchis

 

2 tbsp Paneer

1 tsp Almond, powdered

1 tbsp Milk, to moisten (you can add 1-2 tsps more if required)

1 tsp Sugar, powdered

Rose essence, few drops (optional)

Method

In a bowl mix together all the filling ingredients and set aside.

Deseed the litchis by carefully slitting them horizontally

Now carefully stuff the litchis with the paneer mixture; make sure you do not add too much.

Place it in the fridge fora few minutes and its ready to serve.

 

TROPICAL PAPAYA SMOOTHIE

Ingredients

1 small Papaya (peeled, deseeded and chopped)

4 - 5 slices Pineapple (chopped)

1 small Banana

1 cup Yoghurt/plain curd

1 tbsp Lemon juice

1 tsp Honey

 

Method

Blend all the ingredients in a blender to a smooth consistency.

Freeze for some time and then serve chilled.

 

SIMPLE PLUM CUSTARD

Ingredients

1/2 cup Plums, deseeded and chopped

2 cups Milk + 2 tbsps

1 tsp Sugar

1 tbsp Custard powder

1 tsp Chopped nuts(almond,walnuts)

 

Method

In a thick bottomed vessel bring milk to boil.

In 2 Tbsp of milk, add the custard powder and mix well, so that there are no lumps.

In a blender/mixture add half the chopped plums and make a puree. Keep the rest of the plums aside.

Once the milk boils, add sugar and mix well so that the sugar dissolves completely.

Cook on medium flame.Once the sugar has dissolved, add the custard powder-milk mixture and stir continuously.

Let the milk thicken; once done remove from heat and cool on a wire rack.

In a glass bowl, add some plum puree, then add custard and finally top it up with the remaining chopped plums and nuts.
